Cookbook Challenge #13

Wow, it's been far too long since I last posted one of these. Cunning boyfriend and I have been stuck in a little bit of a rut again, so it was time to break out the cookbooks and Good Food magazines again *laughs* We clipped out quite a few recipes to try, and last night we tried...

Cod with Pancetta and lemony potatoes.

Now, boyfriend isn't a huge fan of fish generally, we tend to only have Teriyaki Salmon (very infrequently!), so I was quite surprised he picked this one for last night.

We both enjoyed it, although I like my potatoes to be crispy and that didn't happen with this recipe. So I didn't have many of those. But otherwise, fairly successful I think.

I think if I made it again, I wouldn't cook the fish on top of the potatoes, giving them a bit more chance to crisp up. It's a really fresh and light meal.

  1. Ooh, I really shouldn't have opened this just before lunch, should I? Suddenly my leftovers look very dull!

We've had fish-in-bacon on our list for a while, but the other half has recently gone vegetarian. I think I'll have to make this for myself though! Looks nommy :)

  3. It sounds really yummy. Last night I made Chicken Lo Mein with my mom. It tasted just like the Chinese takeout you would order on lazy days.
