Wow, it's been far too long since I last posted one of these. Cunning boyfriend and I have been stuck in a little bit of a rut again, so it was time to break out the cookbooks and Good Food magazines again *laughs* We clipped out quite a few recipes to try, and last night we tried...
Cod with Pancetta and lemony potatoes.
We both enjoyed it, although I like my potatoes to be crispy and that didn't happen with this recipe. So I didn't have many of those. But otherwise, fairly successful I think.
I think if I made it again, I wouldn't cook the fish on top of the potatoes, giving them a bit more chance to crisp up. It's a really fresh and light meal.
I'm getting hungry. ;-)

ReplyDeleteWe've had fish-in-bacon on our list for a while, but the other half has recently gone vegetarian. I think I'll have to make this for myself though! Looks nommy :)
